
Blue d'Aoste is a blue, creamy cheese made with whole cows milk and produced across the entire Valle d'Aosta region. Milk comes from local herd of red piebald cows and black piebald cows located at 600 m of elevation. Its compact and ivory texture is characterized by its peculiar dark green veins verging on blue. Strong and long taste.
STORAGE In the fridge or cellar
PAIRING Excellent with warm bread, chestnut honey or as fondue with gnocchi. It can be paired with full-bodied and well-structured wines like Barolo, Barbaresco or Passito wines, like the Passito di Pantelleria.
MILK Cows milk
HOW IT'S MADE Pasteurized whole milk is inoculated with a culture of peniccilium mold and selected milk enzymes. Milk is then acidified in order to avoid scalding and to keep the product unchanged. Ageing takes place in dedicated rooms with controlled levels of temperature and humidity.
